中環高級會所歎名廚粵菜:鮮濃鮑汁脆皮釀關東遼參、滑溜掛汁粉皮蒸龍躉腩、鑊氣十足雲南臘肉炒香苗!自家製四椒滋味醬香辣惹味有驚喜

  發覺香港人現在愈來愈注重私人空間,不像以前般愛熱鬧。喝酒聊天愛到私竇,吃飯娶會也選擇會所。有時不免懷疑香港晚上街道人氣減少,是因為飯局都轉移到謐靜的會所中。近年中環開了不少會所,就像2021年開業的CLUB C+。會所位於都爹利街的古典石梯旁,旺中帶靜。非會員,當然未有機會到訪。最近,會所推出全新網上預約系統,方便會員隨時預約外,更讓非會員客人於網上預約免入會體驗。這些機會,我當然不要錯過!

 

CLUB C+現在推出全新網上預約系統,非會員也可獲得首次體驗機會。

 

  未曾到訪過CLUB C+的非會員,可以享單次免入會體驗。以會所的網上預約系統訂位,可預訂多至八人位。上星期,便與兩名友人到此品嘗午餐。會所由國際知名的香港室內設計師梁志天操刀,令人最深印象是猶如日落的橙色主調。落地玻璃窗鑲上層層杏色濾光玻璃和泰式古銅鐵框,把都爹利街石階鑲成一幅懷舊的風景畫,也像捕捉了美好年代的經典電影片段。而日間的陽光和夜間的燈光,透過玻璃灑到室內,讓空間充滿Timeless的詩意。會所著重私隱,路上人裝飾著風景,但窗外人只能幻想室內的景色。

 

會所由著名設計師梁志天操刀室內設計,有點英倫風,也有點東方味,像一幀懷舊照片。

 

  會所設有大廳外,亦有兩間貴賓廳,廳內有沙發區及私人餐室。區域之間以鑲空桃花心木趟門分隔,保留靈活性。而趟門拉合之後,便會組成中式月亮門,就像中國江南傳統庭園的步道。英倫風格當中不失東方味道,記載香港中西合壁的特色。會所內還有雪茄室,雖然我對雪茄沒有研究,但總覺高級會所內一定要有雪茄室。而會所名為C+,也是取「私家」和「雪茄」的諧音。

 

很喜歡會所的杏色濾光玻璃窗,讓人感覺身處舊日的電影場景當中。

除了雪茄,作為高級會所,當然還有不少珍藏威士忌。

 

  看得出CLUB C+下了重本,除了梁志天先生操刀室內設計外,還有Tino Kwan設計燈光,陳幼堅先生擔任品牌顧問,Catherine Kwai策劃藝術,以及Gary Kwok負責花藝設計。至於坐鎮的大廚當然也是來頭不小。行政總廚陳定邦師傅於2008在中華廚藝學院畢業,後來於利苑酒家、32公館、莊館,還有香港瑞吉酒店的潤中菜廳工作。會所招呼經常到訪的熟客,比起霎眼嬌的新鮮感,更追求師傅選材的經驗、紮實的功夫,烹調出精緻的「家常」口味。

  陳師傅的招牌菜有括鱘龍魚籽北海道海膽水晶大蝦球、淮杞黑蒜花膠燉螺頭、拍薑夏威夷黑岩鹽蒸海上鮮、藤椒葱燒牛柳粒,以及雪裏紅脆皮百花雞等。第一次來,太多想品嘗的菜式,所以預先聯絡了會所的客服團隊,要求以每人$800左右的預算,讓會所發辦設計菜單。
